I figure it's about time for this thread. Let's get a list going of your favorite non-super Graphic Novels. The comics you enjoy that stand outside the standard fare.
Before we get started though, let's get a couple of ground rules down. I don't want to be a dick, but it can't hurt to avoid unnecessary thread drift. For starters, no matter how much you enjoy it, Catwoman has no place on this list. Nor does Watchmen. Even if the characters don't wear tights, neither does a title like Preacher or 100 Bullets. This isn't to make any sort of judgement on the quality of these books, they're just not part of the subject at hand.
Lastly, let's get specific. For instance, Sandman is not an answer. Kindly Ones is.
Anyway, I'll start things off with a few easy ones.
From Hell by Alan Moore and Eddie Campbell
Goodbye, Chunky Rice by Craig Thompson
Chelo's Burden (specifically, Heartbreak Soup) by Los Bros. Hernandez
The Cowboy Wally Show by Kyle Baker
Signal to Noise by Neil Gaiman and Dave McKean

I agree with others' recommendations of Box Office Poison and It's A Good Life, If You Don't Weaken and would add off the top of my head:
Last Lonely Saturday by Jordan Crane and Through the Habitrails by Jeff Nicholson (though I much prefer the original GN as it was, and not the later edition which tacked on a brief epilog...)

I'll concur with Box Office Poison and Good-Bye Chunky Rice (which is one of the most emotional charged comics I've ever read)
